Selek is a very popular vegetable here in Israel, and every one of the many cultures here has several dishes involving this root vegetable.
Selek is also one of the signs used on the Rosh HaShana dinner table. When you eat it, you say the blessing SheYistalku Oyvenu (may our enemies be gone with).
